In saucepan combine 1/4 c. flour & 1 c. sugar. Blend in cherry juice & food coloring.
Cook, stirring constantly, over med. heat, till mixture thickens & boils.
Remove from heat, add drained cherries. Cool.
Sift together 1-1/2 c. flour, salt & soda; blend in brown sugar & oats.
Cut in shortening till particles are the size of small peas.
Press half of oat mixture into bottom of an ungreased 13 x 9-inch pan; spread with cherry mixture.
Sprinkle on rest of oatmeal mixture; press down gently with a spoon.
Bake at 350ºF for 26-30 minutes.
Serve, cut into squares, topped with a generous dollop of whipped cream.
