EVIE'S SPRING-TIME POTATO MEDLEY
This was a favorite dish at Evie's house

Ingredients:
2 lb. small Yukon Gold potatoes, unpeeled
1-1/2 c. frozen green peas
4 tbsp. butter
1/4 c. all-purpose flour
2-1/2 c. milk
1/4 tsp. black pepper or to taste
1/2 tsp. salt or to taste
3 sliced green onions or instant minced onion

Directions:
Scrub potatoes, cut in 1-inch cubes. Add enough cold water to just cover potatoes.
cover & bring to boil, reduce heat & simmer 7 min., just till tender.
Drain & set aside.
In a 3 c. microwaveable dish cook peas till barely tender. Drain & set aside.
In heavy med. saucepan, melt butter; remove from heat; stir in flour.
Slowly stir in milk, making sure there are no lumps.
Cook over med. heat, stirring constantly,  till mixture boils.
Remove from heat; add salt & pepper, onion, potatoes & peas.
Return to med. heat &, stirring constantly, bring to a boil.  R
Remove from heat, serve & enjoy.  Mmmm!!!
