BACK TO CANDY & COOKIES.
MICROWAVE  PEANUT  BRITTLE
This has been a Christmas favorite for years

Ingredients:
1-1/2 c. raw    Spanish peanuts
1 c. granulated sugar
1/2 c. light corn syrup (Karo)
1/8 tsp. salt
2 tbsp. butter or margarine
1 tsp. vanilla
1 tsp. baking soda

Directions:
Mix nuts, sugar, corn syrup and salt in glass bowl with handles.  
Cook 7-9 minutes in microwave on HIGH.  Mixture should bubble and nuts brown.  
Quickly stir in butter and vanilla.  
Cook 2-3 minutes longer. Remove from oven.
Add baking soda and stir quickly until foamy.  
Pour immediately onto greased cookie sheet.  
Let stand 15-20 minutes.   
Break up and store in airtight container.  
Makes 1 pound.
