CHOCOLATE EGG CREAM
A favorite New York City soda fountain drink, popular since the 1930s. Egg creams don't contain any egg but are so named because of the froth (resembling beaten egg whites) that crowns the drink.  They're made with a mixture of milk and syrup into which seltzer water is spritzed, causing the mixture to foam enthusiastically.

Ingredients:
1 oz Chocolate Syrup
2 to 3 oz. milk
Cold seltzer from a siphon bottle

Directions:
Place the syrup in a glass; add milk.
Fill glass with seltzer.
The amounts are approximate - you may want to experiment.
