BACK TO SOUPS & SALADS.
THREE-BEAN TURKEY SOUP
Aaah! Nothing like a   hot bowl of hearty soup after an afternoon of boisterous sledding

Ingredients:
1 lb. ground turkey
1 c. chopped onion
3/4 c. green pepper, diced
2 cloves garlic, minced
1 can (16 oz.) red kidney beans, drained
1 can (16 oz.) Great Northern or pinto beans, drained
1 can (16 oz.) black beans
3 c. water
2 cans (14-1/2 oz.) whole tomatoes, undrained & chopped
1 can (8 oz.) tomato sauce
2 c. sliced carrots
2 tsp. dried oregano
1/2 tsp. dried thyme
1/2 tsp. chicken-flavored bouillon granules
1/2 tsp. salt
1/2 tsp. black pepper

Directions:
In a skillet, brown turkey, onions, green pepper & garlic; drain fat.
Transfer to a heavy Pot.
Add beans, water, tomatoes, sauce, carrots & seasonings.
Stir. Cover & simmer on Low heat about 1 hour till flavors are blended.
Before serving, mash beans slightly for a thicker soup, if desired.
Serves 10 to 12.
Serve with a green salad & hot French bread. Mmmmm! Now for a nap.
