BACK TO SOUPS & SALADS.
BLACK BEAN SOUP
So welcome for supper on a cold winter evening!

Ingredients:
1 lb. (2 c.) dried black beans
8 c. cold water
1 c. chopped onion
1 clove garlic, minced
3 med. stalks celery, diced
2 chicken bouillon cubes
3 c. chopped turkey ham or 3 tbsp. Bacos
1/2 tsp. crushed oregano
1/4 tsp. crushed basil
1/2 tsp. mustard powder
1 tsp. salt, or to taste
1 tsp. black pepper, or to taste

Directions:
Sort and wash beans; place in soup kettle with enough water to cover entirely.
Soak overnight; drain.
Fill kettle with 8 c. cold water.  
Add onion, garlic, celery, bouillon, ham, herbs and spices (except for salt & pepper) to beans.
Bring to a boil.  Cover;  reduce heat & simmer for 2-3 hours or till beans are tender.  
Season with salt & pepper to taste. Add water if beans become too thick.
Serve over rice if desired. Garnish with sour cream before serving.  
Excellent with a green salad & thick French bread and butter.
