STAR'S VEGETARIAN CHILI
A real Potluck pleaser, & it's an original recipe by Star herself!!!

Ingredients:
1 qt. V-8 juice
1 med. onion, chopped
2 cloves garlic, chopped
2 tbsp. olive oil
1 can chopped tomatoes
1 can ro-tel (chopped tomatoes with chili)
2 cans red kidney beans, rinsed & drained
2 cans black beans, rinsed & drained
1 c. TVP
2 c. beef stock (either canned or bullion dissolved)
johnny's seasoning salt (to taste)
chili powder to taste

Directions:
Brown onion  and garlic in olive oil in a Dutch oven.  
Add V-8 juice, tomatoes, Ro-tel & beans.  
Soak TVP in the beef stock for 5-10 Min's; then add to pot & season to taste.
Let cook 30 min's or longer if desired, for flavors to blend.  
This freezes well & is even better the second time.
