PINEAPPLE SWEET-POTATO CASSEROLE
Very good, just right for Thanksgiving dinner

Ingredients:
Casserole:
1 can (40-oz.) can whole sweet potatoes, drained  
1/2 c. butter, softened
1 rounded tsp. salt
1/2 c. orange juice
2 c. crushed pineapple, drained
Topping:
1 c. brown sugar
1/3 c. Flour
1 c. chopped pecans or mixed nuts
1/3 c. cold butter, cut in chunks

Directions:
Casserole:
Mash potatoes, add butter, salt & orange juice; beat until light and fluffy.  
Fold in crushed pineapple.  
Pour into greased 2 quart casserole dish.
Topping:
Mix brown sugar, flour & nuts together
Cut in cold butter till mixture is crumbly.
sprinkle over the sweet potato mixture.
Bake casserole at 350ºF for 45 minutes.  
Makes 10 servings.
