PERRY'S FRIED CHICKEN DINNER
A real Southern Fried Chicken dinner by a Montana Cowboy!!!

Ingredients:
1 frying chicken, cut up
1/3 c. shortening
2 c. flour in a large, clean paper sack
salt & pepper

Directions:
Wash chicken; do not dry.
Salt & pepper chicken to taste.
Drop all chicken pieces into sack of flour; shake to coat. Save flour.
Heat an electric fry pan to 335ºF. Melt shortening in pan.
Place chicken pieces in hot frying pan; cover; fry for 30 minutes.
Turn chicken over, cover pan & fry an additional 30 minutes.
Gravy:  Remove chicken pieces from pan.
Pour leftover flour into hot grease & brown, while stirring constantly.
If you have boiled potatoes, save the water for gravy, otherwise use plain water.
Pour 2 c. potato water & 2 c. milk slowly, & stirring constantly, into skillet with the browned flour.
Let mixture come to a boil & season with salt & pepper to taste.  
Serve a salad with the chicken, potatoes & gravy & chow down.  Mmmmm, Heaven!!!!
