BREADED ZUCCHINI STRIPS

Ingredients:
2 medium zucchini (about 6 or 7-inches long)
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. white or black pepper
1 egg, slightly beaten
1/2 c. bread or cracker crumbs
1/2 c. Butter Flavored shortening
1 tbsp. lemon juice, optional

Directions:
Wash the zucchini and trim the ends.  
Cut in half crosswise, then cut each half into eight lengthwise strips.
Put the flour, salt, and pepper in a plastic bag and shake to combine.  
Add a few zucchini strips to the bag and shake until coated with the flour mixture.  
Remove from the bag and dip in the egg.  Then roll in the crumbs.
Melt the shortening in a skillet.  
Add the zucchini and fry for 4 to 5 minutes, turning once, until golden brown.  
Remove from the skillet and drain on paper towels.  
Sprinkle with lemon juice if desired.
Makes 4 servings
